
Southwest Chicken Tortilla Soup
Men are lazy. But sometimes this is a good thing! Take, for example, this quick and easy recipe that my husband introduced to our family years ago for Southwest Chicken Tortilla Soup. It can be whipped together in a snap and on the table within minutes!
What you’ll need:
1 pound chicken breast (or, you can do like us and simply buy a pre-made rotisserie chicken from the grocer’s deli!)
1 large can of chicken broth
1 large can of diced tomatoes
1 can of red or brown kidney beans
1 can of corn
Half an onion, chopped and diced
Garlic, chopped and diced
Cumen spice
Sour cream
Shredded cheese
Tortilla chips
What to do:
Open the cans of corn, beans, tomatoes and broth and mix them all in a large pot, juices and all. If you bought a pre-made rotisserie chicken, awesome, chop it up and throw it in the pot. If you bought cold chicken breasts, chop them up and fry them in a pan; when they’re brown, toss ‘em in the soup. Add your chopped onions and garlic, spice with a healthy dose of cumen for taste, and bring the mixture to a rolling boil for about five minutes. Serve with a dollop of sour cream, a sprinkling of shredded cheese, and a fistful of tortilla chips.
You’ll be full halfway through your second helping, while the stove-top is still hot! Refrigerate leftovers, microwave the next day or two, still tastes great. My husband would actually do double the recipe and eat it for a week before our oldest kid protested.
We like to do this one when we’ve had a busy day and we just want something good, fast… like this past Sunday. I had been pulling old shrubs out from the landscaping around our house while my husband spent the day cleaning the garage and playing street hockey with the kids. We were both beat tired, and the kids were crazy off the hook and ready to eat, like, now! I ran to the store and picked up what we needed while he cleared and set the table and washed the kids’ hands and sat them down in their chairs. We landed together around the soup bowl in a hurry, moving fast, but within a few bites had settled in and toned down the night from there on out.
