Quick and Easy 8 Layer Dip

That which we call a potluck by any other name would smell as sweet.

Potlucks are awesome. This is an understatement. Potlucks are heaven on earth. A potluck is the sky to rain. A potluck is sunshine on a cloudy day, or the month of May. Potlucks put the wind in our sails. And right now I’d like to potluck the ground you walk on.

Here is my old standby recipe when I don’t have a lot of time and the potluck kettle sounds. Of course, this dish still tastes delicious without all the friendly neighborliness of a potluck smorgasbord. Sometimes it’s simply best enjoyed with the family around the TV on a Sunday afternoon.

Quick and Easy 8 Layer Dip

1 can of refried beans
1 pint of sour cream
1 pint of guacemole
1 package of taco seasoning
1 8-ounce package of shredded lettuce
1 pound of shredded cheese
1 2.25-ounce can of sliced black olives
1 roma tomato, diced
Tortilla chips

Spread the can of refried beans evenly across the bottom of a pizza pan or casserole dish. Layer the sour cream and guacemole on top, then sprinkle with the package of taco seasoning. Cover with shredded lettuce, then sprinkle that with shredded cheese. Finish topping with the sliced black olives and diced tomato, and serve with tortilla chips.

There you go, an easy recipe, ready in minutes.
