My sister-in-law Shanna brought an awesome chicken hotdish to our family get-together last Sunday, and I thought I’d share the recipe. As you know, I’m a big fan of quick, easy meals, and this qualifies as one! (Although, could my husband do it?

DRESSY CHICKEN HOTDISH
3 Cups Brown Rice (Minute Rice)
3 Cups Water
1 Package Rice Pilaf from Schwans or 1 Package Uncle Ben’s prepared Brown and Wild Rice pouch.
1 Can Cream of Chicken Soup
2 Tablespoons Butter
Diced Cooked Chicken Breast (I use Deli Fresh Grilled Chicken Strips cut up)
Shredded Cheese
1 Box Prepared Stove Top Stuffing
Directions:
Bring water to boil and add brown rice. Cook rice completely, and add rice pilaf or wild rice pouch, soup, and butter, then mix. Mix in diced chicken and put in casserole dish. Top with shredded cheese and prepared Stove Top stuffing and heat in oven or microwave until cheese is melted. ENJOY!
